Made in warm summer days, perfected with cold fall nights and a little bit of slovenian magic.
Tasting notes
Pinot Grigio is a youtful wine with fresh taste. There are varieties of fruit aromas, with nicely rounded acid and balanced alcohol. The best potential grapes are used and destemmed. The process of maceration lasted for 12 – 48 hours, which gives the wine an authentic colour of Pinot Grigio.
Harvest
Warm summer, long and warm fall with cold nights was ideal environment for ripeness. The harvest was actualised from 7th to 10th October. Ripeness 22,0 bx, concerning an ideal balance of sugars and acidity. Hand-harvested and checked grapes.
Winemaking
After the harvest the grape berries were cold macerated for 12 – 48 hours. Fermentation held place in inox tanks with mixture of cultivated and indigenous yeast. After the fermentation it aged for 3 months on fine lees. 20% aged in 2000l wooden barrels for 6 months.
