The grapes undergo a careful maceration that lasts between 8 and 12 days, in spontaneous conditions on natural yeasts. The Pinot Gris variety is an exceptional expression of harmony between nature and natural wines, revealing the beauty hidden in every sip. The wines mature in large oak barrels, where they acquire their complexity and depth.
This method of production allows for the creation of wines with a character that tells a story – a story from the beginnings in Georgia to today’s love of wine. Poetovio wines take us back in time and at the same time celebrate the present.
Visual image of the wine
The color of the wine ranges from yellow shades to orange-amber tones. Pinot Gris, which has a skin with a rich pigment, reveals its character after maceration in the color of the wine itself.
Aromatic profile
The aromas are dominated by notes of dried fruits such as apricots and pears, citrus peel, honey and black tea. Each aroma intertwines and complements itself, creating a wonderful aromatic harmony.
Taste and gastronomy
The taste of the wine is very dry and slightly tannic, which gives it structure and elegance. Poetovio wines are excellent companions to stronger dishes, such as aged cheese, venison, lamb and fermented dishes. They also go well with lighter Asian cuisine, e.g. roasted carrots with oriental spices and mushroom dishes.
